I am making Carne Asada out of a sirloin steak.....


RECIPE: 

3 # Flank or Skirt steak ( I had a Sirloin in the freezer....) 


make a meat RUB:

MIX UP:

1 tsp smoked paprika
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper ( I used more...)
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
2 tbsp olive oil

and mix it all up....

( I also added a 1/2 tsp of chipolte pepper sauce out of of can of canned chipolte peppers....which is Hotter than than The Peppers!! ) 

....once you rub the beef with this Mixture....then you put it in a crock pot and add:

1/4 cup orange juice
1/4 cup lemon juice 
1/4 cup lime juice
1/4 cup soy sauce
2 tbsp white vinegar
....and pour it over and drown the steak......

and then turn it on LOW for 6 hours.....

I then made some Pico de gallo....

I chopped up an onion
added some Hunts Garlic Roasted diced tomatoes
some fresh jalapenos that I had soaking in Kosher pickle juice....
sprinkled on some garlic powder
a shot of lime juice
and salt


and I am waiting for the steak to get done!!   

I've got guacamole and refried beans waiting in the wings....

Well, it was good....but it would have been better if I had grilled it on a barbecue grill....but I live in an apartment and we can't make fires. 

It was very good, but the meat always turns out falling-apart tender in a crock pot....but it is not RARE. The next time I may pan fry it on top of the stove. The crock pot is fantastic for chicken and pork.

I've fallen in love with Smoked Paprika after using it on Deviled eggs with bacon bits.......
