I'm putting this in Critters because a pig is a critter......

Beans and Ham Texas Extravaganza  


One bag of dried LIMA BEANS ( soak 12 hours...) [ I forgot to 'sort' them, as usual...]

1 1/2 pound of spiral cut smoked seasoned HAM (<----THE CRITTER ) 

2 onions chopped ( basically an entire plateful! ) 

3 garlic cloves---minced....( I got a teaspoon out of a jar...Close Enough!! ) Bucky

1 tsp Black Pepper ( I probably used more....I don't remember exactly.....I was drinking a beer...) 


1 tbsp olive oil 

2 jalapenos chopped ( I used RAW ones soaked in Kosher pickle juice Shocked )


1 tsp chili powder

[ Eduardo ADDED to the recipe:

       1 tbsp Louisiana sauce
       1 tsp paprika
       1/2 tsp ( approx ) Tabasco Habanero sauce....actually 10-or 12 drops.... Big Grin  ]

Put Beans and onions and mix up in crock pot....dump in jalapenos....mix up....

.....put in ham....

MIX the garlic and powders, etc in 1 cup chicken broth....and pour over the meat....

.....and two more cups chicken broth to make it WET


COOK on high for 7-8 hours!  


OMG!!! Ambrosia!! Food of the Gods!!  

* have a Cold Drink HANDY!!

Hmmmm that does sound good even thought Eduardo is trying to cauterize his hemorroids at the sametime....

I played mad scientist in the kitchen this weekend too!  I started with Zatarain's Family Size Red Beans and Rice and turned it into an impressive Gumbo!!!!  Added Diced Tomatoes, onions and peppers, Sausage and 2lbs of Shrimp.  I was surprised at how good it was....

I am right now soaking some more Lima Beans to make another pot....this time I will add some cooked bacon to wrap around the ham....and probably throw in a can of Rotel because I have a can sitting in the closet....

Okay, I built it! I repeated the original process but I added a RUB to the ham....

.....after I added all the original stuff to the crock pot ( and a small can of mushrooms..), I rubbed the ham and wrapped it in bacon! 

           THE RUB:

                 1 tsp garlic (minced from bottle )
                 1 tsp basil
                 1 tsp oregano
                 1 tsp crushed red pepper
                 1 tsp onion powder
                 1 tsp kosher salt


We'll see how it came out this afternoon
