Welp, I just finished putting a crock pot together.... Bag of soaked Lima Beans and about 2# of Spiral cut ham.... Umm...I added bunch of garlic, Louisiana Sauce, paprika, Hatch Chile powder, Tabasco Habanero sauce, onions, a couple cups of water, and a hell of a bunch of black pepper... Put on HIGH for about 8 hours.... |

It was REALLY good! It just tasted like beans and ham and pepper....it didn't taste MEXICAN-ie...
....but my nose ran continually and my mouth was vibrating! Real good ham and beans!

Some have a natural aversion to celery, some do not. Also requires some knowledge in how to use it... can be overpowering used to excess, can greatly complement some flavors... I hate cilantro.

A study performed by France, several years ago, determined that 36% of people do not like celery either for bitterness/unpleasant taste or consistency. 64% DO like it. Most people do not have the taste bud trait that causes an adverse reaction to celery. Those that have that trait will most likely NEVER like celery. Even in a dish where the bitter flavor is covered up, those with the taste bud trait will most like perceive an unpleasant soapy taste. I, personally, have to wash celery thoroughly with a scrub brush to remove a pungent bitterness which seems to reside mostly in the "skin" of the celery, don't use any of the ends or leaves. I don't like celery soup.

I’ve heard that there are physiological variants that affect how certain people perceive tastes and smells. I also know that depending on how and where it is grown can greatly affect taste. Not enough water, bitter;:too much heat bitter; poor soil nutrients, bitter.

Celery is 96% water... certainly makes sense that not enough water/high heat could increase the bitterness and soil content, of course.
However, celery can save your life in a heavy drought situation... it is a "survival food". Some people have an allergy to it... I did long ago, but have either overcome it or outgrown it. Doesn't bother me anymore.
