I am looking at some binoculars for hunting. They will be used for glassing far ridges out west for deer/elk/sheep and also in the midwest whitetail hunting in the woods/fields.

specifically, I really like the Nikon EDG 10x32 and have been comparing to the Vortex Razor 10x42, Atlas Intrepid Ed 10x42 (similar to Zenray ED 10x42's) and the Vortex Viper 10x42.

Comparing those bino's will I loose a lot in low light conditions with the 10x32 nikons compared to the others or will the "better" glass help greatly in low light conditions given the smaller objective?

Also, I am comparing the Nikon EDG 10x32 to a Nion EDG 8x42. Is the 8x42 enough magnfication for out west glassing far mountains for game?

I do really like the Nikons, I wish I could afford the 10x42's as it would be a no brainer. however, I like the Nikons and I am just trying to decide between the two or if I should end up buying one of the other 10x42's I am comparing.

I will offer you my opinion, as a user of several of the ones you are comparing.  You are
right in picking the premium Nikons as for a quality view.  The 10x32 is an optic that many
will find just fits as a compromise pick.  10X gives you the power, but the 32mm, will leave
you wanting at low light.
I have the Nilon 10x42 EDG, and find it to be just an excellent optic.  Great handling, bright, and just what you may be wanting.  I have experience with some of the others you mention, such as ZenRay, and if your budget is $400 they may be OK, and they are worth the price point.  As far as power goes, a high quality 8x42 will give you all you need, but a 10x42 will give you the longer view.
 
Now since you mentioned the EDG, you should have noticed that Nikon has the offer
for a free Nikon DSLR camera with any EDG purchase.  And check here on the SWFA sample list,
the 10x42 EDG is  available there, at a price that should be in your budget.
 
In my opinion, for a western hunt, do not skimp.  And that means stay with the quality names, and the Nikon  EDGE qualifies.  You do not want a cheap Chinese wannabe to spoil it.

Higher magnifications yield lower brightness levels.
 
Larger objective lens diameters have Brighter images.
 
If you want the 10x, I would go with the 10x42mm.

Personally I wouldn't own a 10x32 bino, they're just to small and light.  I need something larger and heavier to stabilize the image in that power.

As was mentioned by a couple of knowledgable buys here.....given the same quality glass, a 10x32 will never, ever be as bright, or able to resolve as much as the same glass in a 10x42.  I'd stay away from that 10x32 for big game hunting.
