I just purchased a celestron regal 100mm scope with the ED glass, I love my scope but what's the deal on optional eye pieces that I've read people are buying? I'm brand new to these things and am a complete noob. How could I improve an already great scope and what eye piece to get and what to expect?

The Celestron accepts any standard 1 1/4" astronomy eyepiece.
Good eyepieces are available from Celestron, Pentax, Baader, televue, and many others. The Regal 100 has a focal length of 540mm, so to compute magnification divide 540 by the focal length of the eyepiece you are considering. So a 20mm eyepiece yields 27x magnification.
The nicest fixed astro eyepieces I have used are Pentax XW. I have also used the Baader eyepieces which are pretty good, and much less expensive.

Thank you Matt! I'm really dumb about this stuff, so what does 27X magnification mean as oposed to my stock eye piece? My stock mag. is 22-67 power. Like will my images be closer or clearer?

The 27x fixed will magnify the image the same amount as your zoom eyepiece set on 27x. Typically image quality is better with a good fixed than a comparable zoom. They often have a wider field of view as well.
