Mark, I suggest you bring your new electric smoker with you when you go on one of these out of town work adventures! Rub that brisket down with some spices and throw it in the smoker fat cap side up and smoke with your favorite hardwood at about 225 for 10-12 hours or so, or until the center reaches about 185 with a meat thermometer. Then, wrap in foil and let 'er rest inside a cooler for a couple hours or so.

Smoker....Hmmmm!
Well I didn't smoke them but I made a rack of big thick meaty pork spare ribs yesterday that i couldn't stay away from!!!!
My new digital oven won't go below 170 so thats what I cooked them at for about 4 hours @170 foil covered, seasoned with sea salt poultry seasoning and garlic salt. I placed them in a flat sheet cake pan on top of a rack so it wouldn't soak in it's own grease. I then kicked the temp up to 225 for 30 minutes then to broil for 30 with ribs about 6-8" below burners.... just enough to get good carmelization without any burning.
After they had aged a bit I smothered them with my last bottle of Penny's Hawg Wash BBQ Sauce!!! Thanks again brother Ric!!!!!
Lord was that some good eating!!!! I went back for 3rds before cutting myself off! I'm going to go thru some serious withdrawal when that Hawg Wash is all gone!!!

Ted's brisket is outstanding. We were gorging on it for breakfast one morning. Ted was like "Dude, do want anything else besides brisket"? Like a side item...I guess.
I was like...uh...No...I'm good.
