The Bucks is long gone since I dry rub everything on wood fired grills.
The wine is 2013 Frontera Malbec. I have taken to the Malbec in the lst few years. I like the earthiness of Malbecs in clarets.

I, too, have a "tooth" for the Malbecs… great choice for game.  Excellent looking meal.

Just got back in from a business trip to NY and still had two of the quail left. Soooo.....put them in a pot with some parsnips, onion and carrots. The bacon wrap gave a nice smokiness to the soup and it sure worked with the cold I have caught. Now I am getting low on game and only have a package of rabbit left. Sad
