Traditional Christmas Dinner cooking has begun.  Parsnip Vichyssoise is completed to the next to last point before Christmas Day(add cream and heat).  Just finished up the Christmas Bread Pudding with Amaretto Sauce.  Tomorrow will make dressing (sh*take and chanterelle mushrooms with sage, shallots, red currant jelly, Calvados) for the roasted pork loins (cooked Christmas Day) and begin marinating the loins in a Calvados marinade, and Pear and Apple Compote… next day cook the Cranberry/Cherry Relish, Christmas Day cook the pork loins stuffed with dressing, spiced butternut squash, green beans, yeast rolls… heat up everything requiring it and serve.
My daughters especially love the vichyssoise… I cannot get away without cooking it.  I've been cooking all the hoilday meals since the year my twins were born.
